These ‘eggs’ were made using chickpeas — and are one of many protein substitutes that could help save the planet.
Peggs is a powdered substance made primarily from chickpeas along with other plant ingredients. All you have to do is add water and when mixed, it can be used to make scrambled eggs, omelets, baked goods, or anything else requiring eggs.
Creator Grace O’Brien’s says compared to regular grocery store eggs, Peggs contribute 50% fewer greenhouse gas emissions and need 90% less land, water, and energy.
