French scientists figured out a way to ripen cheese at super speed and some cheese purists aren’t happy.
The ripening process for cheese usually takes a long time — it can take months to years. But a team of scientists figured out a workaround to speed up the process that will ripen it in a matter of days. The scientists claim it will taste similar to traditionally-made cheese.
INRA Vide Director Romain Jeantet stated, “What nature takes three weeks, three months or three years to do we can do in two to three days using a process that is far faster and less costly.”
Some people aren’t excited about this invention, though. Founding President of Fromages de Terroirs stated, “This is yet another step towards creating dead food, rather than letting nature run its course.”
Some say making the cheese in a lab compromises the integrity of cheese. The researchers say the cheese will be cheaper and faster to make and can be sold to international markets where there is a high demand for cheese.
The process is possible by splitting up the production into two, one is the production of the cheese and the other of the smell, and then mixing them later to create the end result. They call the technology “From’innov.”
