Here’s what happened when a NowThis producer went vegan for a week. Mercedes Barba decided to go vegan for a week — which she thought wouldn’t be an easy feat on account of her love for meat and cheese. After a “last supper” at a bagel shop, she was ready to start the experiment.
The week started at the grocery store where she brought plenty of fruits and vegetables, tofu, almond milk and more vegan works, like vegan meats and cheeses. Though the grocery bill was higher than she was used to spending, her first homemade vegan dish — vegan coconut curry — was a success.
By day three, she had already dubbed the experience enjoyable and was eager to experiment on meals. Next on the menu was tofu teriyaki stir fry, followed by a delectable-looking vegan tofu stir fry for breakfast. She also took advantage of some online resources that can let you know if what you’re eating is truly animal product-free.
On the sixth day, she wasn’t even bummed about missing an office bagel Friday, saying she felt really good. Overall, she thought the experience was super productive and helped give her a new perspective on the way she cooked at home.
